Bacon Chocolate Pecan Bars/Unforgiven

Sorry about this post being late! I was supposed to write it on Tuesday evening, but we got a surprise email from our landlord about the house being appraised. Soooo I guess it was time to get the couch out of the stairway that has been there for 3 months? Maybe?

It's more stuck than it looks.
After about 5 hours of sawing and putting holes in the wall, we gave up (it was midnight on a work evening). Guess where the couch is now...

I don't really want to talk about it.

Anyways, the post is late. SORRY GUYS.

Today's recipe is not healthy. I think you can probably guess that from the title. You really shouldn't eat these. As a matter of fact, you probably just shouldn't read this entry. Unless you want to make lots of friends friends. Or move up in your job. If you bring them to work you'll probably be promoted. That is, if they make it out of the house...

The recipe was concocted for a celebration of "Hamover" - a pork party. I wanted to make something special instead of your run of the mill pig dish. After some extensive searching, I found this recipe from this lady called The Beeroness. I love a good chocolate pecan pie, so I threw some dark chocolate in there as well. It was a good choice.

What do you do with the leftover bacon? Cover it in brown sugar, bake it, and call it "candied bacon". Duh. It melts in your mouth. Also a big hit at the sausage fest.

Recipe: Unforgivably Unhealthy Bacon Chocolate Beer Shortbread Pecan Bars


Ingredients:

2 sticks + 2 tbsp butter
2 cups flour
2 1/4 cups brown sugar
1/2 tsp salt
2 tbsp water
4 oz dark chocolate
2 cups chopped pecans
1 cup dark beer
1/2 cup light corn syrup
1/4 cup heavy cream
2 eggs, beaten
6 strips bacon

Preheat oven to 350. Arrange your bacon on parchment paper on a baking sheet. For the excess candied bacon, cover the it in brown sugar. Bake it for about 15 minutes, or until turning brown. It will harden upon cooling. Set aside until cooled and crispy.

Add the flour, 1/4 cup brown sugar, and salt to a food processor (or you can mix it in a big bowl if you don't have one). Pulse to combine. Add 1 stick and 2 tbsp of cubed cold butter and process until the butter is incorporated. Add water and process. Keep adding water 1 tsp at a time if you still have some dry flour.

Line a 9 x 13 baking sheet with parchment paper and press the dough to the bottom. Bake at 350 for about 15 minutes, or until golden brown. Set aside to cool.

In a medium pot over high heat, cook the beer until reduced by half. Throw the remaining butter in there and then turn off the heat. Stir until the butter is melted. Add the remaining sugar, pecans, cream, and corn syrup, and stir until incorporated. It should be a rich caramel-y brown. Cool to room temperature and then add the two eggs.

While the sauce is cooling, chop the bacon and the chocolate. Pour the cooled, egg-ed mixture over the crust. Sprinkle with bacon and chocolate. Bake at 350 for 25-30 minutes, or until the mixture doesn't jiggle when you shake it. Allow to cool before slicing into bars (if you can wait that long). Find some friends to help you eat them, or else you will DIE. I probably could have eaten them all. I wanted to motorboat the pan when it came out. Anywayyys....

Step-by-Step Instructions:


Bake the bacon! Put it on some tinfoil and bake at 350 for about 12-15 minutes.

Ok enough bacon porn. While it's cooling,  combine 1/4 cup brown sugar, flour, and salt in a food processor.


Add 1 stick plus 2 tbsp butter and process until combined.

Press mixture onto a 9 x 13 baking dish.
Bake at 350 for about 15 minutes, or until slightly brown. Set aside to cool.



In a medium pot over high heat, reduce beer by half.


Melt the butter.

Add the remaining sugar, pecans, cream, and corn syrup, and stir until incorporated. Cool to room temp and then add the two eggs (cooled so they don't scramble!).
While things are cooling on the pot, chop the bacon and chocolate. 



Add pecan mixture on top of shortbread, and then top with bacon and chocolate. Bake at 350 for 25-30 minutes, or until the mixture doesn't jiggle when you shake it.

Allow to cool before slicing. Enjoy.


Review: Unforgiven

We all know Clint Eastwood can do a pretty sweet western. I would have to say, this is probably my favorite right now. I mean, Eastwood, Morgan Freeman, and Gene Hackman? It doesn't get much better than that.
These two are kind of adorable together.
Like most westerns, revenge is a common theme here. In a quiet town under the watch of sheriff Little Bill (Gene Hackman), a prostitute's face is cut up by an unruly cowboy. Little Bill doesn't really do much about it so the ladies of the brothel get angry and put out a reward for the head of the man who committed the crime. This eventually brings William Munny (Eastwood) out of retirement from his cowboy days. Apparently he and his partner Ned (Morgan Freeman) were super bad ass, which isn't too surprising. 

Besides the fact that this film is oozing with talent, the dialogue and character development are excellent as well. Gene Hackman is a terrifying relentless sheriff. Even the protagonists in the film have their issues. There really is a lot going on, but I'm too lazy to write a long in-depth synopsis. Just see it. I don't think you will be disappointed.
