Sweet Potato Chipotle Soup/Submarine

I have a better camera this week! And a more accessible movie!

Not terribly uplifting, but accessible


It was raining on Thursday. And Wednesday. And a little on Friday. I know I'm not the only one that craves soup when it is raining outside. On top of that, this soup has a kick to it, so it gives you a nice warm feeling in your belly. It's also super healthy, so that's another +1. It's also also really easy and is done in about a half hour. I recommend you eat it with a nice loaf of bread for dipping.

Recipe: Sweet Potato Chipotle Soup

Ingredients:

2 large sweet potatoes
1 red onion
2 cloves garlic
2 tbsp oil
handful of cilantro
1-3 chipotles in adobo, chopped plus some sauce (can adjust for heat preferences)
cumin
6 cups stock
blender/immersion blender/food processor

Instructions:

Chop the sweet potatoes into 1" cubes. I like to leave the skin on for extra fiber and nutrients, but you can do what you want. Chop the onions and garlic. Heat the oil on medium-high. Add the garlic, onions, cilantro and cumin and saute for 3-5 minutes. Add the sweet potato and chipotle and stir to combine. Add the stock and bring to a boil. Boil for about 15-20 minutes, or until the sweet potatoes are soft and tender. Blend with an immersion blender or blender or whatever you have (note: allow the soup to cool if you put it in a blender or food processor). Garnish with a few sprigs of cilantro and serve with bread!


Chop the sweet potatoes into 1" cubes

Chop the onions and garlic and saute with the oil, cilantro and cumin over medium high for 4-5 minutes.

Add the sweet potato and chipotles in adobo and stir to combine

Add the stock, stir, and bring to a boil

Boil for 25-20 minutes, or until the sweet potatoes are tender. This is what mine looked like when it was finished.

Blend with a regular or immersion blender until smooth. Garnish with cilantro and slurp it up!

Review: Submarine

An easy recipe calls for an easy movie. Submarine is a coming-of-age story all about Oliver Tate, a high-school aged boy living in Wales. Oliver has a reason for everything he does, and takes a logical approach to everything in his life - that is, until he meets Jordana. The way the two begin their relationship is a little strange, but it's cute and a pretty realistic portrayal of the start of a high school fling. From there, the film follows the two as they deal with the big questions about love, life, death, and how our relationships as teenagers can reflect what we see with our parents. Some aspects of depression and mental illness are discussed as well, and the tone of the movie, while bright at some points, is overall kind of glum.

I'd recommend the film to somebody who likes quirky Wes Anderson-esque stories. There are some really beautiful scenes from time to time, and the soundtrack is pretty solid to boot. Check out the trailer below.
