Recipe: Sweet Potato and Quinoa Chili
Ingredients:
1 large sweet onion
5 cloves of garlic
1 can tomato paste
1 tbsp chili powder (I used something with a bit more heat!)
1 tbsp cumin
1 tsp oregano
1 can black beans (15 oz)
1 can kidney beans (15 oz)
4 cups stock
2 small sweet potatoes
1 cup quinoa
Start by prepping the ingredients: dice the onion, mince the garlic, drain and rinse each can of beans, wash peel and dice the sweet potatoes, and rinse the quinoa. Sometimes it's just easier to keep the recipe flowing when all of your ingredients are ready to go.
Saute the onion in the bottom of a large soup pot in some olive oil (about a tablespoon or so) for about 5 minutes or until it starts to brown. Add the garlic and cook for about another 2 minutes. Next add the tomato paste, chili powder, cumin and oregano and cook for another couple of minutes or until the spices are fragrant. Add the beans, stock, and sweet potato and bring to a boil. Thrown in the quinoa and cook for another 15-20 minutes, or until the potatoes are tender and the quinoa is done. Serve hot garnished with cilantro, avocado, cornbread...
Step-by-Step Instructions
This one had a lot of prep work so I did it all at once. Dice the onion. |
Mince the garlic. |
Drain and rinse these beans. |
These ones too. |
Wash peel and dice the sweet potatoes. |
Rinse the quinoa well. Now the ingredients are prepped and you can breathe easy as you cook it all. |
Saute the onion in about a tablespoon of oil. |
Once the onion turns brown (about 5 minutes), add the garlic and cook for another two. |
Stir in the spices and garlic paste and cook until the spices are fragrant. |
Add the stock and beans and bring to a boil. |
Stir in the quinoa. Cook for about 20 minutes or until the quinoa is done and the potatoes are tender. |
It should look something like this. |
Serve hot, garnished with cilantro, lime juice, avocado. It goes great with cornbread. I will be posting a recipe for some awesome skillet cornbread soon! |
Review: Martha Marcy May Marlene
I would like to describe this movie as "everything The Village wanted to be", but that wouldn't quite be doing it justice. We go back and forth between Martha joining a self-sufficient cult in the middle of the woods, and her escape and recovery at her sister's house. Led by the charismatic "Patrick", we quickly learn that this group of people does not always have the best intentions. When Martha joins, she is young enough to play along and blindly follow Patrick's orders, but eventually she realizes that it's not all about being a cooperative group of people living away from society. It's about a man who wants to be in control of a group of young people (women, particularly...). Between flashbacks to this life she lived on the farm, we see Martha being supported by who sister who takes Martha in after 2 years of Martha dropping out of sight without a word of warning. Martha is constantly afraid of being found by Patrick and his crew and is not honest with her sister about what happened.
The film is only 102 minutes, and the ending was pretty unsatisfying. I'm not going to give too much away, but I almost feel like it was kind of a cop-out. That being said, it was really well shot and acted, and I was both disgusted and fascinated at the dynamic of this group of people that so blindly decided to follow this dude into the woods. I'd say if you want to watch a pretty depressing movie about cults, this one is your guy. I wouldn't say watch it with The Master because you might just lose faith in humanity. Maybe watch it with something a little more light-hearted. Let me know what you think! You should at least watch this trailer.
